Description

Simple no-bake energy balls made with Medjool dates, walnuts, and coconut, perfect for a healthy, on-the-go snack.


Ingredients

  • 1 cup Medjool dates, pitted
  • 1 cup raw walnut halves
  • 1/2 cup unsweetened shredded coconut
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon fine sea salt


Instructions

  1. Place the pitted Medjool dates in a high-speed food processor and pulse until they break down into a sticky, thick paste.
  2. Add the walnuts, shredded coconut, vanilla extract, and sea salt to the processor.
  3. Pulse the mixture in short bursts until the nuts are finely chopped and the mixture starts to clump together when pressed between your fingers.
  4. Using a small scoop or tablespoon, portion out the mixture and roll it between your palms to form smooth, round balls.
  5. For the best texture, chill the energy balls in the refrigerator for 30 minutes before enjoying. Store them in an airtight container for up to two weeks.
