Ingredients
- 1 cup Medjool dates, pitted
- 1 cup raw walnut halves
- 1/2 cup unsweetened shredded coconut
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon fine sea salt
Instructions
- Place the pitted Medjool dates in a high-speed food processor and pulse until they break down into a sticky, thick paste.
- Add the walnuts, shredded coconut, vanilla extract, and sea salt to the processor.
- Pulse the mixture in short bursts until the nuts are finely chopped and the mixture starts to clump together when pressed between your fingers.
- Using a small scoop or tablespoon, portion out the mixture and roll it between your palms to form smooth, round balls.
- For the best texture, chill the energy balls in the refrigerator for 30 minutes before enjoying. Store them in an airtight container for up to two weeks.
