Description

A hearty and flavorful Keto Beef Stew recipe, perfect for a low-carb diet. This stew features tender beef, low-carb vegetables like radishes and green beans, and is thickened with xanthan gum for a satisfying meal.


Ingredients

  • 2 tablespoons olive oil
  • 1.5 pounds beef stew meat, cut into 1-inch cubes
  • 1 large yellow onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 (14.5 ounce) can diced tomatoes, undrained (optional, can omit for stricter keto)
  • 1/2 cup dry red wine (optional, can substitute with more broth)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 1 cup chopped celery
  • 1 cup chopped radishes (as a low-carb potato substitute)
  • 1 cup chopped green beans
  • 1/2 cup heavy cream (optional, for extra richness)
  • 2 tablespoons xanthan gum (for thickening, or other keto-friendly thickener)
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Pat beef stew meat dry with paper towels and season with salt and pepper. Sear the beef in batches until browned on all sides. Remove beef and set aside.
  2. Add chopped onion to the pot and cook until softened, about 5 minutes. Add minced garlic and cook for 1 minute until fragrant.
  3. Pour in the beef broth and red wine (if using), scraping up any browned bits from the bottom of the pot. Bring to a simmer.
  4. Return the seared beef to the pot. Stir in diced tomatoes (if using), dried thyme, dried rosemary, bay leaf, and smoked paprika. Season with salt and pepper.
  5. Reduce heat to low, cover, and simmer for 1.5 – 2 hours, or until beef is tender.
  6. Add celery, radishes, and green beans to the pot. Continue to simmer, covered, for another 30-45 minutes, or until vegetables are tender.
  7. Remove the bay leaf. In a small bowl, whisk together the heavy cream (if using) with the xanthan gum to create a slurry. Slowly whisk this into the stew, stirring continuously until the stew thickens to your desired consistency. Alternatively, sprinkle xanthan gum directly into the simmering stew a little at a time, whisking constantly to avoid clumps.
  8. Taste and adjust seasonings as needed.
  9. Serve hot, garnished with fresh chopped parsley.

Notes

  • For stricter keto, omit the diced tomatoes and red wine.
  • Radishes are used as a low-carb substitute for potatoes.
  • Xanthan gum is a keto-friendly thickener. Use sparingly as it is very potent.
