Ingredients
- 1 lb ground beef
- 1/2 cup chopped onion
- 1/4 cup chopped green bell pepper
- 2 cloves garlic, minced
- 4 cups beef broth
- 1 cup heavy cream
- 1/2 cup shredded cheddar cheese
- 1/4 cup shredded mozzarella cheese
- 2 tablespoons butter
- 1 tablespoon Worcestershire sauce
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
- Optional toppings: cooked bacon bits, chopped chives, extra shredded cheese
Instructions
- In a large pot or Dutch oven, brown the ground beef over medium-high heat. Drain off any excess grease.
- Add the chopped onion and green bell pepper to the pot and cook until softened, about 5-7 minutes.
- Stir in the minced garlic and cook for another minute until fragrant.
- Pour in the beef broth and bring to a simmer. Stir in the Worcestershire sauce and Dijon mustard.
- Reduce the heat to low, cover, and let simmer for 15 minutes to allow the flavors to meld.
- Stir in the heavy cream and both cheeses until the cheese is melted and the soup is creamy.
- Season with salt and pepper to taste.
- Serve hot, garnished with your favorite toppings like bacon bits, chives, or extra cheese.
