A delicious and easy Keto Pizza Casserole recipe that satisfies pizza cravings without the carbs.
Ingredients
- 1 lb ground beef
- 1/2 onion, chopped (optional)
- 1 clove garlic, minced (optional)
- 1 (14.5 oz) can diced tomatoes, undrained
- 1 (8 oz) can tomato sauce (sugar-free)
- 1 tablespoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup sliced pepperoni
- 2 cups shredded mozzarella cheese, divided
- 1/2 cup shredded Parmesan cheese
- 1/4 cup sliced black olives (optional)
- 1/4 cup sliced mushrooms (optional)
Instructions
- Preheat oven to 375°F (190°C).
- In a large skillet, brown the ground beef over medium-high heat. If using, add chopped onion and minced garlic during the last few minutes of cooking until softened. Drain off any excess grease.
- Stir in the diced tomatoes, tomato sauce, Italian seasoning, salt, and pepper. Bring to a simmer and cook for 5-7 minutes, allowing flavors to meld and sauce to thicken slightly.
- Stir in half of the pepperoni slices, 1 cup of mozzarella cheese, and the Parmesan cheese into the beef mixture. If using, add olives and mushrooms.
- Transfer the mixture to a 9×13 inch baking dish.
- Top with the remaining 1 cup of mozzarella cheese and the rest of the pepperoni slices.
- Bake for 20-25 minutes, or until the cheese is melted and bubbly and the casserole is heated through.
- Let stand for a few minutes before serving.
Notes
- Ensure your tomato sauce is sugar-free to keep the carb count low.
- Feel free to add other keto-friendly pizza toppings like bell peppers or jalapeños.
