Description

A delicious and easy Keto Pizza Casserole recipe that satisfies pizza cravings without the carbs.


Ingredients

  • 1 lb ground beef
  • 1/2 onion, chopped (optional)
  • 1 clove garlic, minced (optional)
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 (8 oz) can tomato sauce (sugar-free)
  • 1 tablespoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup sliced pepperoni
  • 2 cups shredded mozzarella cheese, divided
  • 1/2 cup shredded Parmesan cheese
  • 1/4 cup sliced black olives (optional)
  • 1/4 cup sliced mushrooms (optional)


Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, brown the ground beef over medium-high heat. If using, add chopped onion and minced garlic during the last few minutes of cooking until softened. Drain off any excess grease.
  3. Stir in the diced tomatoes, tomato sauce, Italian seasoning, salt, and pepper. Bring to a simmer and cook for 5-7 minutes, allowing flavors to meld and sauce to thicken slightly.
  4. Stir in half of the pepperoni slices, 1 cup of mozzarella cheese, and the Parmesan cheese into the beef mixture. If using, add olives and mushrooms.
  5. Transfer the mixture to a 9×13 inch baking dish.
  6. Top with the remaining 1 cup of mozzarella cheese and the rest of the pepperoni slices.
  7. Bake for 20-25 minutes, or until the cheese is melted and bubbly and the casserole is heated through.
  8. Let stand for a few minutes before serving.

  • Ensure your tomato sauce is sugar-free to keep the carb count low.
  • Feel free to add other keto-friendly pizza toppings like bell peppers or jalapeños.
