Ingredients

  • 2 cups Kodiak Cakes buttermilk pancake and waffle mix
  • ¾ cup unsweetened almond milk
  • ¼ cup maple syrup
  • ¼ cup avocado oil
  • 2 ripe bananas mashed
  • 1 egg
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • ½ cup chocolate chips plus more for topping

Instructions

  1. Preheat oven to 350° F and line a muffin tray with muffin cups or spray with cooking spray.
  2. Combine all ingredients in a mixing bowl, except for chocolate chips. Mix until smooth.
  3. Add chocolate chips and stir to incorporate.
  4. Fill greased muffin cups 3/4 full. Top with a few additional chocolate chips.
  5. Bake at 350° F for 16-18 minutes or until tops are golden and a toothpick inserted comes out clean.
  6. Let cool for a few minutes in the muffin tray then transfer to a wire cooling rack to cool completely.

  • Adjust baking time slightly depending on your oven.
  • These muffins can be stored in an airtight container at room temperature for a few days.
