Description

A refreshing and simple salad featuring crisp romaine lettuce, sweet mandarin oranges, sharp red onion, and crunchy toasted nuts, all brought together with a light, tangy dressing.


Ingredients

  • 1 head romaine lettuce, chopped
  • 1 (11 ounce) can mandarin oranges, drained
  • 1/2 cup sliced red onion
  • 1/2 cup chopped pecans or almonds, toasted
  • 1/4 cup rice vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon honey or sugar
  • 1 teaspoon soy sauce
  • 1/4 teaspoon ground ginger
  • Salt and freshly ground black pepper to taste


Instructions

  1. In a large salad bowl, combine the chopped romaine lettuce, drained mandarin oranges, sliced red onion, and toasted pecans or almonds. Set aside.
  2. In a small bowl, whisk together the rice vinegar, olive oil, honey (or sugar), soy sauce, and ground ginger until well combined.
  3. Season the dressing with salt and pepper to taste.
  4. Just before serving, pour the dressing over the salad ingredients.
