Ingredients
- 1 head romaine lettuce, chopped
- 1 (11 ounce) can mandarin oranges, drained
- 1/2 cup sliced red onion
- 1/2 cup chopped pecans or almonds, toasted
- 1/4 cup rice vinegar
- 2 tablespoons olive oil
- 1 tablespoon honey or sugar
- 1 teaspoon soy sauce
- 1/4 teaspoon ground ginger
- Salt and freshly ground black pepper to taste
Instructions
- In a large salad bowl, combine the chopped romaine lettuce, drained mandarin oranges, sliced red onion, and toasted pecans or almonds. Set aside.
- In a small bowl, whisk together the rice vinegar, olive oil, honey (or sugar), soy sauce, and ground ginger until well combined.
- Season the dressing with salt and pepper to taste.
- Just before serving, pour the dressing over the salad ingredients.
