A simple and delicious recipe for maple roasted delicata squash, perfect as a side dish or a healthy snack.
Ingredients
- 2 medium delicata squash
- 2 tablespoons olive oil
- 2 tablespoons pure maple syrup
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon cinnamon
- Pinch of cayenne pepper (optional)
Instructions
- Preheat the oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
- Wash and dry the squash, then slice off both ends. Cut the squash in half lengthwise and use a spoon to scoop out the seeds.
- Place the squash halves cut-side down and slice them into ½-inch thick half-moon shapes.
- In a large bowl, combine the sliced squash, olive oil, maple syrup, salt, pepper, cinnamon, and optional cayenne pepper. Toss well until every slice is evenly coated.
- Arrange the squash in a single layer on the prepared baking sheet, making sure not to overcrowd the pan.
- Roast for 20-25 minutes, flipping the slices halfway through cooking, until the squash is tender and the edges are caramelized and lightly browned.
- Serve immediately.
Notes
- For extra caramelization, you can broil the squash for the last 1-2 minutes of cooking, watching carefully to prevent burning.
- Feel free to adjust the spices to your preference. Nutmeg or ginger can also be added.
- Delicata squash is known for its edible skin, so you can choose to eat it or peel it before cooking.
