Description

A flavorful and easy Mexican Casserole recipe featuring ground beef, beans, corn, and tortillas, topped with melted cheese.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground beef or turkey
  • 1 onion, chopped
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can corn, drained
  • 1 (10 ounce) can diced tomatoes with green chilies, undrained
  • 1 (8 ounce) can tomato sauce
  • 1 packet (1.25 ounces) taco seasoning mix
  • 1/2 cup water
  • 10-12 corn tortillas, cut into strips or torn
  • 2 cups shredded Mexican cheese blend


Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
  2. Heat olive oil in a large skillet over medium-high heat. Add ground beef/turkey and chopped onion. Cook, breaking up the meat, until browned. Drain any excess fat.
  3. Stir in black beans, corn, diced tomatoes with green chilies, tomato sauce, taco seasoning, and water. Bring to a simmer and cook for 5 minutes, allowing flavors to meld.
  4. Spread a thin layer of the meat mixture on the bottom of the prepared baking dish.
  5. Arrange about one-third of the corn tortilla pieces over the meat mixture.
  6. Sprinkle with about one-third of the shredded cheese.
  7. Repeat layers: meat mixture, tortillas, cheese, ending with a final layer of meat mixture topped generously with cheese.
  8. Bake for 25-30 minutes, or until bubbly and the cheese is melted and lightly browned.
  9. Let stand for 5-10 minutes before serving.

Notes

  • For a spicier casserole, use diced tomatoes with jalapeños or add a pinch of cayenne pepper.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave.
  • This casserole can be made ahead of time and refrigerated before baking. Add a few extra minutes to the baking time if baking from cold.
