Description
A flavorful and easy Mexican Casserole recipe featuring ground beef, beans, corn, and tortillas, topped with melted cheese.
Ingredients
- 1 tablespoon olive oil
- 1 pound ground beef or turkey
- 1 onion, chopped
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (15 ounce) can corn, drained
- 1 (10 ounce) can diced tomatoes with green chilies, undrained
- 1 (8 ounce) can tomato sauce
- 1 packet (1.25 ounces) taco seasoning mix
- 1/2 cup water
- 10-12 corn tortillas, cut into strips or torn
- 2 cups shredded Mexican cheese blend
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
- Heat olive oil in a large skillet over medium-high heat. Add ground beef/turkey and chopped onion. Cook, breaking up the meat, until browned. Drain any excess fat.
- Stir in black beans, corn, diced tomatoes with green chilies, tomato sauce, taco seasoning, and water. Bring to a simmer and cook for 5 minutes, allowing flavors to meld.
- Spread a thin layer of the meat mixture on the bottom of the prepared baking dish.
- Arrange about one-third of the corn tortilla pieces over the meat mixture.
- Sprinkle with about one-third of the shredded cheese.
- Repeat layers: meat mixture, tortillas, cheese, ending with a final layer of meat mixture topped generously with cheese.
- Bake for 25-30 minutes, or until bubbly and the cheese is melted and lightly browned.
- Let stand for 5-10 minutes before serving.
Notes
- For a spicier casserole, use diced tomatoes with jalapeños or add a pinch of cayenne pepper.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave.
- This casserole can be made ahead of time and refrigerated before baking. Add a few extra minutes to the baking time if baking from cold.
