Description

Quick and easy no-bake energy bites packed with protein from peanut butter and flaxseed, perfect for a healthy snack on the go.


Ingredients

  • 1 cup rolled oats
  • 2/3 cup toasted shredded coconut
  • 1/2 cup creamy peanut butter
  • 1/2 cup ground flaxseed
  • 1/2 cup semi-sweet chocolate chips
  • 1/3 cup honey
  • 1 teaspoon vanilla extract


Instructions

  1. In a large mixing bowl, stir together all ingredients until thoroughly combined.
  2. Cover the bowl and chill the mixture in the refrigerator for about 30 minutes; this makes it much easier to roll.
  3. Scoop out tablespoon-sized portions and roll them into compact balls between your palms.
  4. Store the bites in an airtight container in the refrigerator for up to one week.
