Description

A simple and delicious one-pan meal featuring orzo pasta, broccoli, and a creamy cheddar cheese sauce.


Ingredients

  • 1 tbsp olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup uncooked orzo pasta
  • 3 cups vegetable broth
  • 1 1/2 cups broccoli florets, chopped small
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup shredded sharp cheddar cheese
  • 1/4 cup grated Parmesan cheese


Instructions

  1. Heat olive oil in a large skillet or Dutch oven over medium heat. Add onion and cook until softened, about 5 minutes.
  2. Add garlic and orzo, and cook for 2 minutes, stirring constantly, until orzo is lightly toasted.
  3. Pour in vegetable broth, bring to a simmer, then add broccoli, salt, and pepper.
  4. Cover, reduce heat to low, and simmer for 15-20 minutes, or until orzo is cooked through and most of the liquid has been absorbed, stirring occasionally.
  5. Remove from heat and stir in cheddar cheese and Parmesan cheese until melted and creamy.
  6. Serve immediately.

Notes

  • For a richer flavor, you can use chicken broth instead of vegetable broth.
  • Feel free to add other vegetables like peas, carrots, or spinach.
  • Adjust the amount of cheese to your preference.
