Description
A simple and delicious one-pan meal featuring orzo pasta, broccoli, and a creamy cheddar cheese sauce.
Ingredients
- 1 tbsp olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 cup uncooked orzo pasta
- 3 cups vegetable broth
- 1 1/2 cups broccoli florets, chopped small
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup shredded sharp cheddar cheese
- 1/4 cup grated Parmesan cheese
Instructions
- Heat olive oil in a large skillet or Dutch oven over medium heat. Add onion and cook until softened, about 5 minutes.
- Add garlic and orzo, and cook for 2 minutes, stirring constantly, until orzo is lightly toasted.
- Pour in vegetable broth, bring to a simmer, then add broccoli, salt, and pepper.
- Cover, reduce heat to low, and simmer for 15-20 minutes, or until orzo is cooked through and most of the liquid has been absorbed, stirring occasionally.
- Remove from heat and stir in cheddar cheese and Parmesan cheese until melted and creamy.
- Serve immediately.
Notes
- For a richer flavor, you can use chicken broth instead of vegetable broth.
- Feel free to add other vegetables like peas, carrots, or spinach.
- Adjust the amount of cheese to your preference.
