Description

A simple and flavorful recipe for Parmesan Herb Roasted Acorn Squash, perfect as a side dish.


Ingredients

  • 1 acorn squash
  • 2 tablespoons olive oil
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon chopped fresh rosemary
  • 1 teaspoon chopped fresh thyme
  • 1/2 teaspoon garlic powder
  • Salt and freshly ground black pepper to taste


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the acorn squash in half lengthwise and scoop out the seeds and pulp.
  3. Brush the cut sides of the squash with olive oil.
  4. In a small bowl, combine the Parmesan cheese, rosemary, thyme, garlic powder, salt, and pepper.
  5. Sprinkle the herb and cheese mixture evenly over the cut sides of the squash.
  6. Place the squash cut-side down on a baking sheet.
