Description

A simple and delicious no-bake recipe for Pineapple Balls, featuring cream cheese, crushed pineapple, and shredded coconut, often rolled in extra coconut for coating.


Ingredients

  • 1 (8 oz) package cream cheese, softened
  • 1 (20 oz) can crushed pineapple, well drained
  • 1 cup shredded coconut, plus more for rolling
  • 1/2 cup chopped pecans (or other nuts), optional
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract


Instructions

  1. In a large bowl, beat the softened cream cheese until smooth.
  2. Add the well-drained crushed pineapple, 1 cup shredded coconut, chopped pecans (if using), powdered sugar, and vanilla extract.
  3. Mix until all ingredients are thoroughly combined.
  4. Cover the bowl and refrigerate the mixture for at least 1 hour, or until firm enough to roll.
  5. Place extra shredded coconut (for rolling) on a shallow plate.
  6. Roll the chilled mixture into 1-inch balls.
  7. Roll each ball in the shredded coconut until fully coated.
  8. Place the pineapple balls on a serving plate or in an airtight container.
  9. Refrigerate until ready to serve. Best served chilled.

Notes
