A simple and delicious no-bake recipe for Pineapple Balls, featuring cream cheese, crushed pineapple, and shredded coconut, often rolled in extra coconut for coating.
Ingredients
- 1 (8 oz) package cream cheese, softened
- 1 (20 oz) can crushed pineapple, well drained
- 1 cup shredded coconut, plus more for rolling
- 1/2 cup chopped pecans (or other nuts), optional
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
Instructions
- In a large bowl, beat the softened cream cheese until smooth.
- Add the well-drained crushed pineapple, 1 cup shredded coconut, chopped pecans (if using), powdered sugar, and vanilla extract.
- Mix until all ingredients are thoroughly combined.
- Cover the bowl and refrigerate the mixture for at least 1 hour, or until firm enough to roll.
- Place extra shredded coconut (for rolling) on a shallow plate.
- Roll the chilled mixture into 1-inch balls.
- Roll each ball in the shredded coconut until fully coated.
- Place the pineapple balls on a serving plate or in an airtight container.
- Refrigerate until ready to serve. Best served chilled.
Notes
- Ensure the crushed pineapple is very well drained to prevent the balls from being too soft.
- The mixture must be chilled sufficiently to be able to roll into balls.
- These are best served chilled.
