Description

Ingredients

  • 4 Large Eggs
  • 1/3 Cup Unsalted Butter, softened
  • 1/3 Cup Canola Oil, or vegetable oil
  • 1⅓ Cup Sugar
  • 1/2 teaspoon Vanilla Extract
  • 3½ Cups Flour
  • 2 teaspoons Baking Powder
  • 1/2 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 3½ teaspoons Pumpkin Pie Spice
  • 1 Cup Pumpkin Puree
  • 1 Cup Bananas, mashed (about 2 medium bananas)
  • 3 Cups Chocolate Chips


Instructions

  1. Heat the oven to 350 degrees F and spray 2 bread pans with nonstick spray.
  2. In a large mixer, add the eggs, butter, oil, sugar and vanilla, mix until smooth.
  3. In another bowl, whisk together the flour, baking powder, baking soda, salt and pumpkin pie spice.
  4. Add to the mixer with the pumpkin and bananas and mix to combine.
  5. Fold in the chocolate chips and divide the batter between the two pans.
  6. Bake for 50 minutes then gently open the door and lay a piece of foil over the bread and bake for an additional 10 minutes for a total of 60 minutes.

  • *Pumpkin Puree: Ensure you use plain pumpkin puree, not pumpkin pie filling.
