Ingredients

  • 2 (8 ounce) packages cream cheese, softened
  • 1/2 cup canned pumpkin puree
  • 1/2 cup confectioners’ sugar
  • 1 tsp pumpkin pie spice
  • 1/2 tsp vanilla extract
  • 1/4 cup chopped pecans
  • 1 (8 ounce) package gingersnap cookies, crushed (for serving)
  • Pretzel sticks, for garnish

Instructions

  1. In a large bowl, beat cream cheese and pumpkin puree together until smooth.
  2. Add confectioners’ sugar, pumpkin pie spice, and vanilla extract; beat until well combined.
  3. Stir in chopped pecans.
  4. Form the mixture into a ball and wrap tightly in plastic wrap.
  5. Refrigerate for at least 2 hours, or until firm.
  6. Just before serving, unwrap the cheese ball and place it on a serving platter.
  7. Gently press a pretzel stick into the top center of the cheese ball to resemble a pumpkin stem.
  8. Serve with gingersnap cookies or other crackers.

Notes

  • Ensure the cream cheese is fully softened for a smooth mixture.
  • Chill the cheese ball thoroughly to make it easier to handle and serve.
  • You can substitute gingersnap cookies with graham crackers or other favorite crackers.
