Ingredients
- 2 (8 ounce) packages cream cheese, softened
- 1/2 cup canned pumpkin puree
- 1/2 cup confectioners’ sugar
- 1 tsp pumpkin pie spice
- 1/2 tsp vanilla extract
- 1/4 cup chopped pecans
- 1 (8 ounce) package gingersnap cookies, crushed (for serving)
- Pretzel sticks, for garnish
Instructions
- In a large bowl, beat cream cheese and pumpkin puree together until smooth.
- Add confectioners’ sugar, pumpkin pie spice, and vanilla extract; beat until well combined.
- Stir in chopped pecans.
- Form the mixture into a ball and wrap tightly in plastic wrap.
- Refrigerate for at least 2 hours, or until firm.
- Just before serving, unwrap the cheese ball and place it on a serving platter.
- Gently press a pretzel stick into the top center of the cheese ball to resemble a pumpkin stem.
- Serve with gingersnap cookies or other crackers.
