Ingredients

  • 0.25 cup olive oil

  • 0.75 tsp lemon zest
  • 2 tsp fresh parsley, chopped (plus more for garnish)
  • 1.5 tsp fresh thyme leaves
  • 0.5 tsp salt
  • 0.25 tsp pepper
  • 1 tsp minced garlic
  • Cooking spray or butter (for baking dish)
  • Lemon wedges (for serving)

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly grease a baking dish with cooking spray or butter.
  2. In a small bowl, whisk together the olive oil, honey (if using), soy sauce, lemon zest, chopped parsley, thyme, salt, pepper, and minced garlic to create your herb marinade.
  3. Pat the cod fillets dry with paper towels. Place the cod in the prepared baking dish. Spoon the prepared marinade generously over each cod fillet, ensuring they are well coated.
  4. For enhanced flavor, you can allow the fish to marinate in the refrigerator for at least 30 minutes, or up to 8 hours, before baking.
