Instructions
- Preheat your oven to 400°F (200°C). Lightly grease a baking dish with cooking spray or butter.
- In a small bowl, whisk together the olive oil, honey (if using), soy sauce, lemon zest, chopped parsley, thyme, salt, pepper, and minced garlic to create your herb marinade.
- Pat the cod fillets dry with paper towels. Place the cod in the prepared baking dish. Spoon the prepared marinade generously over each cod fillet, ensuring they are well coated.
