Description
A simple and fast recipe for making comforting chicken noodle soup from scratch.
Ingredients
- 1 tbsp olive oil
- 1 cup chopped yellow onion
- 1 cup chopped celery
- 1 cup chopped carrots
- 8 cups chicken broth
- 2 cups cooked chicken, shredded or diced
- 2 cups egg noodles (or other small pasta)
- 1 tsp dried thyme
- 1/2 tsp dried rosemary
- Salt and freshly ground black pepper to taste
- 1/4 cup fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add onion, celery, and carrots. Sauté for 5-7 minutes until vegetables are softened.
- Pour in chicken broth. Bring the mixture to a boil.
- Add the shredded or diced cooked chicken, egg noodles, dried thyme, and dried rosemary. Stir well.
- Reduce heat to medium-low, cover, and simmer for 8-10 minutes, or until noodles are tender. Stir occasionally to prevent noodles from sticking.
- Season with salt and pepper to taste.
- Ladle into bowls, garnish with fresh parsley, and serve hot.
Notes
- You can use rotisserie chicken for even quicker preparation.
- Adjust the amount of broth based on your preferred soup consistency.
