Description

A simple and fast recipe for making comforting chicken noodle soup from scratch.


Ingredients

  • 1 tbsp olive oil
  • 1 cup chopped yellow onion
  • 1 cup chopped celery
  • 1 cup chopped carrots
  • 8 cups chicken broth
  • 2 cups cooked chicken, shredded or diced
  • 2 cups egg noodles (or other small pasta)
  • 1 tsp dried thyme
  • 1/2 tsp dried rosemary
  • Salt and freshly ground black pepper to taste
  • 1/4 cup fresh parsley, chopped (for garnish)


Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion, celery, and carrots. Sauté for 5-7 minutes until vegetables are softened.
  2. Pour in chicken broth. Bring the mixture to a boil.
  3. Add the shredded or diced cooked chicken, egg noodles, dried thyme, and dried rosemary. Stir well.
  4. Reduce heat to medium-low, cover, and simmer for 8-10 minutes, or until noodles are tender. Stir occasionally to prevent noodles from sticking.
  5. Season with salt and pepper to taste.
  6. Ladle into bowls, garnish with fresh parsley, and serve hot.

Notes

  • You can use rotisserie chicken for even quicker preparation.
  • Adjust the amount of broth based on your preferred soup consistency.
