Quick and flavorful garlic butter steak bites combined with crispy Yukon gold potatoes, seasoned with fresh herbs for a delicious one-pan meal.
Ingredients
- 1 tablespoon olive oil
- 1 pound Yukon gold potatoes, cut into 1/2-inch cubes
- 1/4 teaspoon garlic powder
- Salt and freshly ground black pepper to taste
- 1 1/4 pounds sirloin steak, cut into 1-inch pieces
- 2 tablespoons unsalted butter
- 1 tablespoon minced garlic
- 1 teaspoon chopped fresh thyme
- 1 teaspoon chopped fresh rosemary
- 1 teaspoon chopped fresh oregano
Instructions
- Heat a large cast-iron skillet over medium-high heat. Add the olive oil and the cubed Yukon gold potatoes. Season the potatoes with garlic powder, salt, and pepper.
- Cook the potatoes for about 5 minutes without stirring to get a nice sear, then stir and continue cooking for another 10-15 minutes, stirring occasionally, until the potatoes are tender and golden brown. Remove the cooked potatoes from the skillet and set aside.
- Increase the heat in the skillet to high. Add the sirloin steak pieces, seasoned with salt and black pepper. Sear the steak for about 1 minute per side, then stir and cook until all sides are golden brown, approximately 4-5 minutes total.
- Reduce the heat to medium. Add the unsalted butter, minced garlic, fresh thyme, rosemary, and oregano to the skillet. Cook for about 1 minute until the garlic is fragrant and the herbs are aromatic.
- Return the cooked potatoes to the skillet with the steak and herb butter. Toss everything together and cook for another 2-3 minutes to allow the flavors to meld beautifully.
- Serve hot and enjoy these flavorful steak bites and potatoes.

- Use a cast-iron skillet for the best sear on the potatoes and steak.
- Fresh herbs provide the best flavor, but dried herbs can be substituted in a pinch (use 1/3 the amount).
