Description

Quick and flavorful garlic butter steak bites combined with crispy Yukon gold potatoes, seasoned with fresh herbs for a delicious one-pan meal.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound Yukon gold potatoes, cut into 1/2-inch cubes
  • 1/4 teaspoon garlic powder
  • Salt and freshly ground black pepper to taste
  • 1 1/4 pounds sirloin steak, cut into 1-inch pieces
  • 2 tablespoons unsalted butter
  • 1 tablespoon minced garlic
  • 1 teaspoon chopped fresh thyme
  • 1 teaspoon chopped fresh rosemary
  • 1 teaspoon chopped fresh oregano


Instructions

  1. Heat a large cast-iron skillet over medium-high heat. Add the olive oil and the cubed Yukon gold potatoes. Season the potatoes with garlic powder, salt, and pepper.
  2. Cook the potatoes for about 5 minutes without stirring to get a nice sear, then stir and continue cooking for another 10-15 minutes, stirring occasionally, until the potatoes are tender and golden brown. Remove the cooked potatoes from the skillet and set aside.
  3. Increase the heat in the skillet to high. Add the sirloin steak pieces, seasoned with salt and black pepper. Sear the steak for about 1 minute per side, then stir and cook until all sides are golden brown, approximately 4-5 minutes total.
  4. Reduce the heat to medium. Add the unsalted butter, minced garlic, fresh thyme, rosemary, and oregano to the skillet. Cook for about 1 minute until the garlic is fragrant and the herbs are aromatic.
  5. Return the cooked potatoes to the skillet with the steak and herb butter. Toss everything together and cook for another 2-3 minutes to allow the flavors to meld beautifully.
  6. Serve hot and enjoy these flavorful steak bites and potatoes.

Notes

  • Use a cast-iron skillet for the best sear on the potatoes and steak.
  • Fresh herbs provide the best flavor, but dried herbs can be substituted in a pinch (use 1/3 the amount).
