Description
A quick and flavorful ground beef stir fry featuring lean beef, broccoli, carrots, and a sweet-savory sauce, served over rice with optional sriracha drizzle.
Ingredients
- 1½ lbs lean ground beef
- 2 Tbsp vegetable oil
- 3 cloves garlic, minced
- 1 Tbsp fresh ginger, grated
- 4 scallions (white and light green parts sliced, dark green parts reserved for garnish)
- 6 oz broccoli florets, bite-sized
- 5 oz shredded carrots
- 2 Tbsp toasted sesame seeds, divided
- For the Sauce: ⅓ cup packed dark brown sugar
- ⅓ cup reduced-sodium soy sauce
- 1 Tbsp cornstarch
- 1 Tbsp unseasoned rice vinegar
- 2 tsp toasted sesame oil
- For Serving (optional): Cooked rice
- Sour cream-sriracha drizzle (½ cup sour cream, 2 Tbsp sriracha)
Instructions
- Prepare your sauce by whisking together brown sugar, soy sauce, cornstarch, rice vinegar, and sesame oil in a small bowl. Set aside.
- In a separate small bowl, combine sour cream and sriracha for a drizzle, adding a few drops of water if needed to reach a good consistency. Set aside.
- Cook rice according to package directions.
- Heat vegetable oil in a large nonstick skillet or wok over high heat. Add minced garlic, grated ginger, and the white and light green parts of the scallions. Stir-fry for about 1 minute until fragrant and lightly golden.
- Add the ground beef to the skillet, breaking it into smaller pieces. Cook until it’s just browned and cooked through, approximately 5 minutes.
- Stir in the broccoli florets and cook, stirring frequently, for about 2 minutes until they turn bright green.
- Add the shredded carrots and the reserved sauce mixture to the skillet. Continue to cook and stir until the sauce thickens and the vegetables are tender-crisp, about 3-4 minutes.
- Serve the stir-fry over cooked rice. Garnish with the reserved dark green scallion slices and a sprinkle of toasted sesame seeds. Drizzle with the sriracha-sour cream sauce if desired.
