Description

A simple and delicious recipe for roasted delicata squash, a versatile side dish that caramelizes beautifully in the oven.


Ingredients

  • 2 medium delicata squash (about 1 pound each)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • Optional: ½ teaspoon smoked paprika or ¼ teaspoon cinnamon


Instructions

  1. Preheat the oven to 425°F (220°C). Line a large baking sheet with parchment paper.
  2. Wash and dry the delicata squash thoroughly.
  3. Slice off the stem and bottom ends of each squash.
  4. Cut each squash in half lengthwise.
  5. Use a spoon to scoop out the seeds and stringy pulp from the center.
  6. Place the squash cut-side down on a cutting board and slice each half into ½-inch thick half-moon shapes.
  7. Place the sliced squash in a large bowl.
  8. Drizzle with olive oil, salt, pepper, and any optional spices.
  9. Use your hands to toss everything together until the squash slices are evenly coated.
  10. Spread the squash in a single layer on the prepared baking sheet, ensuring the pieces are not overlapping.
