Ingredients
- 2 medium delicata squash (about 1 pound each)
- 2 tablespoons olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- Optional: ½ teaspoon smoked paprika or ¼ teaspoon cinnamon
Instructions
- Preheat the oven to 425°F (220°C). Line a large baking sheet with parchment paper.
- Wash and dry the delicata squash thoroughly.
- Slice off the stem and bottom ends of each squash.
- Cut each squash in half lengthwise.
- Use a spoon to scoop out the seeds and stringy pulp from the center.
- Place the squash cut-side down on a cutting board and slice each half into ½-inch thick half-moon shapes.
- Place the sliced squash in a large bowl.
- Drizzle with olive oil, salt, pepper, and any optional spices.
- Use your hands to toss everything together until the squash slices are evenly coated.
- Spread the squash in a single layer on the prepared baking sheet, ensuring the pieces are not overlapping.
- Roast for 20 to 25 minutes, flipping the slices halfway through, until the squash is tender and the edges are golden brown and caramelized.
