Ingredients
- 1 pound honeynut squash
- 1 tablespoon olive oil
- Salt to taste
- Black pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- Wash the honeynut squash thoroughly.
- Cut the squash in half lengthwise and scoop out the seeds and stringy bits.
- Place the squash halves cut-side down on a baking sheet.
- Roast for 20-25 minutes, or until tender when pierced with a fork.
- Carefully flip the squash halves and drizzle with olive oil.
- Season with salt and pepper.
- Continue roasting for another 10-15 minutes, or until the squash is caramelized and tender.
