Description

A quick and easy chicken salad recipe using pre-cooked rotisserie chicken, perfect for sandwiches or a light meal.


Ingredients

  • 3 cups shredded rotisserie chicken
  • 1/2 cup mayonnaise
  • 1/4 cup plain Greek yogurt (optional, for lighter salad)
  • 1/4 cup finely chopped celery
  • 1/4 cup finely chopped red onion (or green onions)
  • 2 tbsp sweet pickle relish (or dill relish)
  • 1 tbsp Dijon mustard
  • 1 tbsp lemon juice
  • Salt and black pepper to taste
  • 1/4 cup chopped fresh parsley or dill (for garnish)


Instructions

  1. In a large bowl, combine the shredded rotisserie chicken, chopped celery, and chopped red onion.
  2. In a separate small bowl, whisk together mayonnaise, Greek yogurt (if using), sweet pickle relish, Dijon mustard, and lemon juice until smooth.
  3. Pour the dressing over the chicken mixture. Gently toss to combine all ingredients thoroughly.
  4. Season with salt and black pepper to taste.
  5. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
  6. Before serving, taste and adjust seasonings if necessary. Garnish with fresh parsley or dill. Serve on bread, crackers, or lettuce wraps.

Notes

  • For a spicier kick, add a pinch of cayenne pepper or a dash of hot sauce to the dressing.
  • You can add other ingredients like chopped apples, grapes, or nuts for extra texture and flavor.
