A quick and easy chicken salad recipe using pre-cooked rotisserie chicken, perfect for sandwiches or a light meal.
Ingredients
- 3 cups shredded rotisserie chicken
- 1/2 cup mayonnaise
- 1/4 cup plain Greek yogurt (optional, for lighter salad)
- 1/4 cup finely chopped celery
- 1/4 cup finely chopped red onion (or green onions)
- 2 tbsp sweet pickle relish (or dill relish)
- 1 tbsp Dijon mustard
- 1 tbsp lemon juice
- Salt and black pepper to taste
- 1/4 cup chopped fresh parsley or dill (for garnish)
Instructions
- In a large bowl, combine the shredded rotisserie chicken, chopped celery, and chopped red onion.
- In a separate small bowl, whisk together mayonnaise, Greek yogurt (if using), sweet pickle relish, Dijon mustard, and lemon juice until smooth.
- Pour the dressing over the chicken mixture. Gently toss to combine all ingredients thoroughly.
- Season with salt and black pepper to taste.
- Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
- Before serving, taste and adjust seasonings if necessary. Garnish with fresh parsley or dill. Serve on bread, crackers, or lettuce wraps.
