Description

A simple and flavorful recipe for Sheet Pan Lemon Garlic Butter Salmon, which can optionally include vegetables like broccoli or asparagus, all cooked together on one baking sheet for easy preparation and cleanup.


Ingredients

  • 1.5 lbs salmon fillets (4-6 oz each)
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1/4 cup unsalted butter, melted
  • Juice of 1 lemon, plus lemon slices for garnish
  • 1 tsp dried dill (or 1 tbsp fresh chopped dill)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Optional: 1 head broccoli, cut into florets, or 1 lb asparagus, trimmed


Instructions

  1. Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
  2. Pat salmon fillets dry with paper towels. Arrange them on one side of the prepared baking sheet. If adding vegetables, toss them with 1 tbsp olive oil, salt, and pepper, and arrange them on the other side of the baking sheet.
  3. In a small bowl, whisk together melted butter, remaining 1 tbsp olive oil, minced garlic, lemon juice, dill, salt, and pepper.
  4. Spoon or brush the butter mixture evenly over the salmon fillets (and vegetables if using). Place lemon slices on top of each salmon fillet if desired.
  5. Bake for 12-18 minutes, depending on the thickness of your salmon and your desired doneness. Salmon is cooked when it flakes easily with a fork (internal temperature reaches 145°F/63°C). If cooking with thicker vegetables like broccoli, you might want to roast them for 5-10 minutes before adding the salmon.
  6. Serve immediately with lemon wedges.
