Description

A simple and flavorful recipe for shredded chicken tacos, perfect for a quick weeknight meal.


Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt to taste
  • 1 cup salsa
  • Warmed tortillas or taco shells
  • Favorite toppings (e.g., shredded cheese, chopped lettuce, chopped tomato, sour cream)


Instructions

  1. Place the chicken breasts in a single layer in a pot or deep skillet. Cover with water and bring to a simmer. Cook until chicken is cooked through (Approx. 10-15 minutes).
  2. Transfer the chicken to a cutting board or bowl, and shred it with 2 forks.
  3. In a skillet, heat 1 tablespoon oil and sauté the onion until it’s soft and translucent (3 minutes).
  4. Add the garlic, and sauté for 30 seconds.
  5. Add cumin, chili powder, and salt. Cook for 1 more minute to combine.
  6. Add salsa, and mix it in. If necessary, add a splash of water. Let it warm up.
  7. Add the shredded chicken to the sauce and mix it in.
  8. Simmer for 2-3 minutes.
  9. Serve in warmed tortillas or taco shells with your favorite toppings.
