Description

A simple and versatile slow cooker recipe for tender, flavorful shredded chicken that’s perfect for tacos, salads, wraps, or meal prep.


Ingredients

  • 3 lbs boneless, skinless chicken breasts (about 4 large)
  • 1 cup chicken broth (low sodium preferred)
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder


Instructions

  1. Place the chicken breasts in the bottom of your slow cooker.
  2. Pour the chicken broth over the chicken, then sprinkle evenly with salt, pepper, garlic powder, and onion powder.
  3. Cover the slow cooker with its lid.
  4. Cook on the LOW setting for 6-8 hours, or on the HIGH setting for 3-4 hours, until the chicken is thoroughly cooked and easily shreds with two forks.
  5. Carefully remove the cooked chicken from the slow cooker.
  6. Using two forks (or a stand mixer with a paddle attachment), shred the chicken into desired pieces.
  7. Return the shredded chicken to the slow cooker with some of the cooking liquid to keep it moist and flavorful. Stir to combine.
  8. Use immediately in your favorite recipes like tacos, wraps, or casseroles. Alternatively, let it cool and portion into freezer-safe bags for later use (up to two months).
