A simple and versatile slow cooker recipe for tender, flavorful shredded chicken that’s perfect for tacos, salads, wraps, or meal prep.
Ingredients
- 3 lbs boneless, skinless chicken breasts (about 4 large)
- 1 cup chicken broth (low sodium preferred)
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
Instructions
- Place the chicken breasts in the bottom of your slow cooker.
- Pour the chicken broth over the chicken, then sprinkle evenly with salt, pepper, garlic powder, and onion powder.
- Cover the slow cooker with its lid.
- Cook on the LOW setting for 6-8 hours, or on the HIGH setting for 3-4 hours, until the chicken is thoroughly cooked and easily shreds with two forks.
- Carefully remove the cooked chicken from the slow cooker.
- Using two forks (or a stand mixer with a paddle attachment), shred the chicken into desired pieces.
- Return the shredded chicken to the slow cooker with some of the cooking liquid to keep it moist and flavorful. Stir to combine.
- Use immediately in your favorite recipes like tacos, wraps, or casseroles. Alternatively, let it cool and portion into freezer-safe bags for later use (up to two months).
