Description

A hearty and flavorful Slow Cooker Cowboy Chili, perfect for a comforting meal.


Ingredients

  • 2 pounds ground beef
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 (28 ounce) can diced tomatoes, undrained
  • 1 (15 ounce) can kidney beans, rinsed and drained
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (10 ounce) can Rotel (diced tomatoes and green chilies), undrained
  • 1 (4 ounce) can green chilies, undrained
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper


Instructions

  1. In a large skillet, brown the ground beef over medium-high heat. Drain off any excess grease.
  2. Add the chopped onion and minced garlic to the skillet with the beef. Cook until the onion is softened, about 5 minutes.
  3. Transfer the beef mixture to a slow cooker.
  4. Add the diced tomatoes, kidney beans, black beans, Rotel, and green chilies to the slow cooker.
  5. Stir in the chili powder, cumin, salt, and pepper.
  6. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until heated through and flavors have melded.
  7. Serve hot, with your favorite toppings such as shredded cheese, sour cream, or chopped cilantro.

Notes

  • For a spicier chili, add a pinch of cayenne pepper or a diced jalapeno.
  • You can substitute ground turkey or chicken for the ground beef.
  • Adjust seasonings to your taste.
