A hearty and flavorful Slow Cooker Cowboy Chili, perfect for a comforting meal.
Ingredients
- 2 pounds ground beef
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 (28 ounce) can diced tomatoes, undrained
- 1 (15 ounce) can kidney beans, rinsed and drained
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (10 ounce) can Rotel (diced tomatoes and green chilies), undrained
- 1 (4 ounce) can green chilies, undrained
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- In a large skillet, brown the ground beef over medium-high heat. Drain off any excess grease.
- Add the chopped onion and minced garlic to the skillet with the beef. Cook until the onion is softened, about 5 minutes.
- Transfer the beef mixture to a slow cooker.
- Add the diced tomatoes, kidney beans, black beans, Rotel, and green chilies to the slow cooker.
- Stir in the chili powder, cumin, salt, and pepper.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until heated through and flavors have melded.
- Serve hot, with your favorite toppings such as shredded cheese, sour cream, or chopped cilantro.
Notes
- For a spicier chili, add a pinch of cayenne pepper or a diced jalapeno.
- You can substitute ground turkey or chicken for the ground beef.
- Adjust seasonings to your taste.
