Description
A flavorful and easy-to-make taco meatloaf recipe, perfect for a weeknight dinner.
Ingredients
- 1.5 lbs ground beef (80/20 lean recommended)
- 1 (1 oz) packet taco seasoning
- 1/2 cup crushed tortilla chips (or breadcrumbs)
- 1/4 cup milk
- 1 large egg, beaten
- 1/2 cup finely diced onion
- 1/4 cup finely diced bell pepper (any color)
- For the topping:
- 1/2 cup ketchup or tomato sauce
- 1 tbsp brown sugar
- 1 tsp apple cider vinegar
- 1/2 cup shredded cheddar cheese (for topping, optional)
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a loaf pan or line a baking sheet with parchment paper.
- In a large bowl, combine ground beef, taco seasoning, crushed tortilla chips, milk, beaten egg, diced onion, and diced bell pepper. Mix thoroughly with your hands until just combined, but do not overmix.
- Form the meat mixture into a loaf shape and place it in the prepared loaf pan or on the baking sheet.
- In a small bowl, whisk together ketchup (or tomato sauce), brown sugar, and apple cider vinegar to make the glaze.
- Spread half of the glaze over the top of the meatloaf.
- Bake for 45-55 minutes, or until the internal temperature reaches 160°F (71°C).
- During the last 10 minutes of baking, spread the remaining glaze over the meatloaf. If using cheese, sprinkle it over the top during the last 5 minutes of baking.
- Once cooked, remove from the oven and let the meatloaf rest for 5-10 minutes before slicing and serving.
Notes
- For a spicier meatloaf, add a pinch of cayenne pepper or a diced jalapeño to the meat mixture.
- If you don’t have crushed tortilla chips, regular breadcrumbs or panko can be used as a substitute.
- The glaze can be adjusted to your preference; add more brown sugar for sweetness or a dash of hot sauce for heat.
