Description

An easy and flavorful taco soup recipe with ground turkey or beef, beans, corn, and tomatoes, perfect for a quick weeknight meal.


Ingredients

  • 1 pound ground turkey or lean ground beef
  • 1 packet (1 ounce) taco seasoning
  • 1 (16 ounce) can chili beans in sauce, undrained
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can corn, drained
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 (4 ounce) can chopped green chiles, undrained
  • 4 cups chicken or beef broth
  • Optional toppings: Sour cream, shredded cheese, tortilla chips, avocado


Instructions

  1. In a large pot or Dutch oven, cook the ground meat over medium-high heat until it is no longer pink. Drain off any excess fat.
  2. Stir in the taco seasoning until the meat is well-coated.
  3. Add the chili beans, black beans, corn, diced tomatoes, green chiles, and broth to the pot. Stir everything to combine.
  4. Bring the soup to a simmer and cook for at least 15 minutes, stirring occasionally. For a more developed flavor, allow it to simmer for up to 30 minutes.
  5. Ladle the soup into bowls and serve hot with your favorite toppings.
