Description
Tender Crockpot Steak Bites are flavorful, bite-sized pieces of sirloin steak slow-cooked in a rich gravy made with beef broth, Worcestershire sauce, and au jus mix, perfect for serving over mashed potatoes or rice.
Ingredients
- 2 lbs sirloin steak, cut into 1-inch pieces
- 1 teaspoon kosher salt
- 1 teaspoon garlic powder
- 1/2 teaspoon black pepper
- 1-2 tablespoons olive oil (for searing)
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 cup beef broth
- 1/4 cup water
- 1 tablespoon Worcestershire sauce
- 1 packet (1 oz) au jus gravy mix
- 4 tablespoons unsalted butter, cut into pats
- 1/4 cup liquid from crockpot (for slurry)
- 1 tablespoon cornstarch (for slurry)
- Fresh chopped parsley, for garnish (optional)
Instructions
- Season the steak pieces with salt, garlic powder, and black pepper, tossing to ensure an even coat.
- Heat 1-2 tablespoons of olive oil in a large skillet over medium-high heat until hot. In batches, sear the seasoned steak bites until nicely browned on all sides, being careful not to overcrowd the pan. Transfer the seared steak to the slow cooker. Add more oil to the skillet between batches if necessary.
- Once all the steak is seared and in the slow cooker, add the chopped onion, minced garlic, beef broth, water, Worcestershire sauce, and the au jus gravy mix. Stir gently to combine.
- Arrange the pats of butter on top of the steak mixture.
- Cover the slow cooker and cook on the LOW setting for 6-8 hours, or on the MEDIUM setting for 4-6 hours, until the steak is incredibly tender.
- Once the steak is cooked through and tender, carefully remove about 1/4 cup of the liquid from the slow cooker into a small mixing bowl. Whisk in the cornstarch until a smooth slurry forms, with no lumps.
- Return this cornstarch slurry to the slow cooker and stir it into the steak and sauce. Increase the slow cooker’s heat to HIGH and cook for an additional 10-15 minutes, or until the sauce has thickened to your desired consistency.
- Serve the tender steak bites over mashed potatoes, rice, or egg noodles, if desired. Garnish with fresh chopped parsley before serving.
Notes
- For best results, do not skip the searing step as it adds flavor and texture to the steak bites.
- Adjust cooking time based on your slow cooker’s settings; check tenderness after the minimum time.
- This recipe is gluten-free if using a gluten-free au jus mix and Worcestershire sauce.
