Ingredients
- 1 pound ground turkey
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (15 ounce) can kidney beans, rinsed and drained
- 1 (15 ounce) can corn, drained
- 1 (28 ounce) can crushed tomatoes
- 1 (10 ounce) can diced tomatoes with green chilies, undrained
- 1 (1.25 ounce) packet taco seasoning
- 1 (1 ounce) packet ranch seasoning mix (dry)
- 4 cups chicken broth
- Optional toppings: shredded cheese, sour cream, crushed tortilla chips, avocado
Instructions
- Heat olive oil in a large pot or Dutch oven over medium-high heat. Add ground turkey and chopped onion. Cook, breaking up the turkey, until browned. Drain any excess fat.
- Add minced garlic and cook for another minute until fragrant.
- Stir in black beans, kidney beans, corn, crushed tomatoes, diced tomatoes with green chilies, taco seasoning, ranch seasoning, and chicken broth.
- Bring the soup to a boil, then reduce heat to low, cover, and simmer for at least 20-30 minutes to allow flavors to meld. The longer it simmers, the better.
- Taste and adjust seasonings if necessary.
- Ladle into bowls and serve with your favorite taco soup toppings.
