Description

A hearty and flavorful white bean chicken chili recipe, perfect for a comforting meal.


Ingredients

  • 1 tablespoon olive oil
  • 1 medium yellow onion, chopped
  • 1 green bell pepper, chopped
  • 2 cloves garlic, minced
  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 4 cups chicken broth
  • 2 (15-ounce) cans great northern or cannellini beans, rinsed and drained
  • 1 (4-ounce) can diced green chiles, undrained
  • 1 teaspoon ground cumin
  • ½ teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 4 ounces cream cheese, softened and cubed
  • Juice of 1 lime


Instructions

  1. Heat olive oil in a large Dutch oven or pot over medium-high heat.
  2. Add the onion and bell pepper and cook until softened, about 5-7 minutes.
  3. Add the garlic and cook for one more minute until fragrant.
  4. Add the chicken pieces and cook until lightly browned on all sides.
  5. Stir in the chicken broth, one can of beans, the diced green chiles, cumin, oregano, salt, and pepper.
  6. Bring to a boil, then reduce heat, cover, and simmer for 20 minutes.
  7. While it simmers, mash the second can of beans with a fork or a potato masher until creamy.
  8. Stir the mashed beans into the chili to thicken it.
  9. Continue to simmer for another 10 minutes.
  10. Reduce heat to low and stir in the cubed cream cheese until it is completely melted and the chili is creamy.
  11. Stir in the lime juice just before serving.
  12. Garnish with cilantro, avocado, or sour cream if desired.
