A hearty and flavorful white bean chicken chili recipe, perfect for a comforting meal.
Ingredients
- 1 tablespoon olive oil
- 1 medium yellow onion, chopped
- 1 green bell pepper, chopped
- 2 cloves garlic, minced
- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
- 4 cups chicken broth
- 2 (15-ounce) cans great northern or cannellini beans, rinsed and drained
- 1 (4-ounce) can diced green chiles, undrained
- 1 teaspoon ground cumin
- ½ teaspoon dried oregano
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 4 ounces cream cheese, softened and cubed
- Juice of 1 lime
Instructions
- Heat olive oil in a large Dutch oven or pot over medium-high heat.
- Add the onion and bell pepper and cook until softened, about 5-7 minutes.
- Add the garlic and cook for one more minute until fragrant.
- Add the chicken pieces and cook until lightly browned on all sides.
- Stir in the chicken broth, one can of beans, the diced green chiles, cumin, oregano, salt, and pepper.
- Bring to a boil, then reduce heat, cover, and simmer for 20 minutes.
- While it simmers, mash the second can of beans with a fork or a potato masher until creamy.
- Stir the mashed beans into the chili to thicken it.
- Continue to simmer for another 10 minutes.
- Reduce heat to low and stir in the cubed cream cheese until it is completely melted and the chili is creamy.
- Stir in the lime juice just before serving.
- Garnish with cilantro, avocado, or sour cream if desired.
