Description

A hearty and flavorful white chicken chili recipe, perfect for a comforting meal.


Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper (optional)
  • 4 cups chicken broth
  • 2 (15-ounce) cans Great Northern beans, rinsed and drained
  • 1 (4-ounce) can diced green chilies
  • 3 cups cooked chicken, shredded
  • 1/2 cup chopped fresh cilantro
  • Salt and freshly ground black pepper to taste
  • Optional toppings: shredded cheese, sour cream, avocado, lime wedges


Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion and cook until softened, about 5-7 minutes.
  2. Add garlic, cumin, oregano, and cayenne pepper (if using) and cook for 1 minute more until fragrant.
  3. Pour in chicken broth and bring to a simmer.
  4. Add Great Northern beans and diced green chilies. Bring back to a simmer.
  5. Stir in shredded chicken and cook for 5-10 minutes, or until heated through.
  6. Stir in fresh cilantro. Season with salt and pepper to taste.
  7. Serve hot, with desired toppings.

Notes

  • For a spicier chili, add more cayenne pepper or a pinch of red pepper flakes.
  • You can use pre-cooked rotisserie chicken for convenience.
  • If you prefer a thicker chili, mash some of the beans against the side of the pot before adding the chicken.
