A hearty and flavorful white chicken chili recipe, perfect for a comforting meal.
Ingredients
- 2 tablespoons olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1/2 teaspoon dried oregano
- 1/4 teaspoon cayenne pepper (optional)
- 4 cups chicken broth
- 2 (15-ounce) cans Great Northern beans, rinsed and drained
- 1 (4-ounce) can diced green chilies
- 3 cups cooked chicken, shredded
- 1/2 cup chopped fresh cilantro
- Salt and freshly ground black pepper to taste
- Optional toppings: shredded cheese, sour cream, avocado, lime wedges
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add onion and cook until softened, about 5-7 minutes.
- Add garlic, cumin, oregano, and cayenne pepper (if using) and cook for 1 minute more until fragrant.
- Pour in chicken broth and bring to a simmer.
- Add Great Northern beans and diced green chilies. Bring back to a simmer.
- Stir in shredded chicken and cook for 5-10 minutes, or until heated through.
- Stir in fresh cilantro. Season with salt and pepper to taste.
- Serve hot, with desired toppings.
Notes
- For a spicier chili, add more cayenne pepper or a pinch of red pepper flakes.
- You can use pre-cooked rotisserie chicken for convenience.
- If you prefer a thicker chili, mash some of the beans against the side of the pot before adding the chicken.
