Ingredients

Instructions

  2. Take the zucchini and squeeze it in a large kitchen towel over the sink to remove as much liquid as possible.
  3. In a bowl, whisk together the flour, baking powder, cinnamon, salt, and nutmeg until combined.
  4. In a large bowl, whisk together the brown sugar, melted coconut oil, beaten eggs, and 2 teaspoons vanilla extract.
