Description
A protein-packed, gluten-free banana cake made with mashed banana, protein powder, egg whites, oat flour, and warm spices, perfect for a healthy dessert or snack.
Ingredients
- 1 ripe banana, mashed
- 2 egg whites
- 1 whole egg
- ¾ teaspoon vanilla extract
- 1 teaspoon maple syrup (adjust to taste)
- 1 scoop unflavored protein powder (dairy-free or whey)
- 2 tablespoons gluten-free oat flour
- 1 teaspoon grain-free baking powder
- 1 teaspoon cinnamon
- 1-2 teaspoons dairy-free mini chocolate chips (optional)
- Flaky salt, for serving
Instructions
- Preheat your oven to 350°F (175°C) and lightly grease a 7×5.25 inch baking dish.
- In a tall measuring cup or a blender, combine the mashed banana, egg whites, whole egg, vanilla extract, and maple syrup. Blend until the mixture is completely smooth. An immersion blender works well for this.
- Add the protein powder, oat flour, baking powder, and cinnamon to the wet ingredients. Blend again until a smooth batter forms.
- Pour the batter into your prepared baking dish. If desired, sprinkle the mini chocolate chips over the top of the batter.
- Bake for 23-25 minutes, or until the cake is set in the center and a toothpick inserted comes out clean.
- Remove the cake from the oven and let it cool slightly before slicing. Serve warm, garnished with a sprinkle of flaky salt.
