Description

A protein-packed, gluten-free banana cake made with mashed banana, protein powder, egg whites, oat flour, and warm spices, perfect for a healthy dessert or snack.


Ingredients

  • 1 ripe banana, mashed
  • 2 egg whites
  • 1 whole egg
  • ¾ teaspoon vanilla extract
  • 1 teaspoon maple syrup (adjust to taste)
  • 1 scoop unflavored protein powder (dairy-free or whey)
  • 2 tablespoons gluten-free oat flour
  • 1 teaspoon grain-free baking powder
  • 1 teaspoon cinnamon
  • 1-2 teaspoons dairy-free mini chocolate chips (optional)
  • Flaky salt, for serving


Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a 7×5.25 inch baking dish.
  2. In a tall measuring cup or a blender, combine the mashed banana, egg whites, whole egg, vanilla extract, and maple syrup. Blend until the mixture is completely smooth. An immersion blender works well for this.
  3. Add the protein powder, oat flour, baking powder, and cinnamon to the wet ingredients. Blend again until a smooth batter forms.
  4. Pour the batter into your prepared baking dish. If desired, sprinkle the mini chocolate chips over the top of the batter.
  5. Bake for 23-25 minutes, or until the cake is set in the center and a toothpick inserted comes out clean.
  6. Remove the cake from the oven and let it cool slightly before slicing. Serve warm, garnished with a sprinkle of flaky salt.
