An easy one-pan French onion chicken and rice bake that’s comforting and flavorful, combining tender chicken breasts with rice, French onion soup, and melted cheese topped with crispy onions.
Ingredients
- 2 pounds boneless skinless chicken breasts
- 1.5 cups long-grain white rice, rinsed
- 10.5 ounces condensed French onion soup
- 14.5 ounces chicken broth
- 1.5 cups shredded mozzarella cheese
- 1 cup crispy fried onions
- 0.25 cup butter, sliced
- 1 packet onion soup mix
Instructions
- Preheat the oven to 350°F and lightly grease a 9×13-inch baking dish.
- Whisk together the dry rice, French onion soup, and chicken broth directly in the baking dish until combined.
- Place the chicken breasts over the rice mixture, then top each piece with a slice of butter and a sprinkle of the dry onion soup mix.
- Seal the dish tightly with aluminum foil and bake for 1 hour and 15 minutes to allow the rice to absorb the liquid and the chicken to tenderize.
- Uncover, top with the mozzarella cheese and crispy fried onions, and bake for an additional 15 minutes until the cheese is melted and the onions are golden.
Notes
- Ensure the rice is rinsed to remove excess starch.
