Description

An easy one-pan French onion chicken and rice bake that’s comforting and flavorful, combining tender chicken breasts with rice, French onion soup, and melted cheese topped with crispy onions.


Ingredients

  • 2 pounds boneless skinless chicken breasts
  • 1.5 cups long-grain white rice, rinsed
  • 10.5 ounces condensed French onion soup
  • 14.5 ounces chicken broth
  • 1.5 cups shredded mozzarella cheese
  • 1 cup crispy fried onions
  • 0.25 cup butter, sliced
  • 1 packet onion soup mix


Instructions

  1. Preheat the oven to 350°F and lightly grease a 9×13-inch baking dish.
  2. Whisk together the dry rice, French onion soup, and chicken broth directly in the baking dish until combined.
  3. Place the chicken breasts over the rice mixture, then top each piece with a slice of butter and a sprinkle of the dry onion soup mix.
  4. Seal the dish tightly with aluminum foil and bake for 1 hour and 15 minutes to allow the rice to absorb the liquid and the chicken to tenderize.
  5. Uncover, top with the mozzarella cheese and crispy fried onions, and bake for an additional 15 minutes until the cheese is melted and the onions are golden.
