Description

A simple and hearty slow cooker chili recipe that is perfect for a weeknight meal or game day. Packed with ground beef, beans, and spices, it’s a crowd-pleaser.


Ingredients

  • 2 pounds ground beef
  • 1 large onion chopped
  • 2 (14.5 ounce) cans diced tomatoes undrained
  • 1 (15 ounce) can tomato sauce
  • 1 (6 ounce) can tomato paste
  • 2 (15 ounce) cans kidney beans rinsed and drained
  • 1 (15 ounce) can pinto beans rinsed and drained
  • 1 (4 ounce) can chopped green chiles undrained
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper optional
  • Optional toppings: shredded cheese sour cream crackers


Instructions

  1. In a large skillet brown the ground beef over medium-high heat. Drain off any excess grease.
  2. Transfer the browned ground beef to a 6-quart (or larger) slow cooker.
  3. Add the chopped onion diced tomatoes tomato sauce tomato paste kidney beans pinto beans and green chiles to the slow cooker.
  4. Stir in the chili powder ground cumin salt black pepper and cayenne pepper (if using). Mix everything well.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  6. Stir before serving. Serve hot with your favorite toppings like shredded cheese sour cream or crackers.

Notes

  • For a spicier chili, add more cayenne pepper or a pinch of red pepper flakes.
  • If you don’t have kidney or pinto beans, you can substitute with other types of beans like black beans or cannellini beans.
  • This chili can be made ahead of time and reheated. It often tastes even better the next day!
