- 1 1/2 cups full-fat cottage cheese
- 3 large eggs
- 1/3 cup pure maple syrup
- 1 teaspoon vanilla extract
- 1/2 cup oat flour
- 1 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1 cup fresh blueberries, plus extra for the top
Instructions
- Begin by preheating your oven to 350°F and preparing an 8×8-inch baking dish with parchment paper or a light coating of oil.
- Place the cottage cheese, eggs, maple syrup, vanilla, oat flour, baking powder, cinnamon, and salt into a blender. Process until the mixture is completely smooth and uniform in texture.
- Pour the blended base into a mixing bowl and gently fold in the blueberries with a spatula to keep them intact.
