Ingredients

  • 2 cups cooked chicken breast, cubed or shredded
  • 1/3 cup plain nonfat Greek yogurt
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon honey
  • 2 medium Gala apples, diced
  • 1 cup red seedless grapes, halved
  • 1/4 cup chopped celery
  • 1/4 cup chopped walnuts
  • Kosher salt to taste
  • Freshly ground black pepper to taste


Instructions

  1. Begin by preparing the dressing: in a small bowl, whisk together the Greek yogurt, fresh lemon juice, and honey until smooth. Set this aside.
  2. In a large mixing bowl, combine the cooked chicken, diced apples, halved grapes, chopped celery, and walnuts.
  3. Pour the prepared yogurt dressing over the chicken and fruit mixture. Gently fold all the ingredients together until thoroughly coated.
