A delicious high-protein twist on a classic taco salad, featuring seasoned ground beef, fresh vegetables, crunchy Doritos, and a creamy dressing for a satisfying meal.
Ingredients
- 1 lb (450g) lean ground beef
- 1 packet (1 oz) taco seasoning mix
- 1 head romaine lettuce, chopped (about 6 cups)
- 1 cup cherry tomatoes, halved
- 1 can (15 oz) black beans, drained and rinsed
- 2 cups crushed Doritos (nacho cheese flavor)
- 1 cup shredded sharp cheddar cheese
- 1 avocado, diced
- 1/2 cup sour cream
- 1/4 cup salsa
- 1/4 cup chopped red onion
- Juice of 1 lime
- Salt and pepper to taste
Instructions
- In a large skillet over medium heat, cook the ground beef until browned and crumbled, about 5-7 minutes. Drain excess fat.
- Stir in the taco seasoning mix and 1/4 cup water. Simmer for 3-5 minutes until thickened. Remove from heat and let cool slightly.
- In a large bowl, combine chopped romaine lettuce, cherry tomatoes, black beans, red onion, and diced avocado.
- Add the cooled beef mixture and shredded cheddar cheese to the bowl. Toss gently to combine.
- In a small bowl, mix sour cream, salsa, and lime juice to make the dressing. Drizzle over the salad and toss lightly.
- Just before serving, sprinkle crushed Doritos on top for crunch. Serve immediately in bowls.
Notes
- For extra protein, add grilled chicken or quinoa.
- Make it spicier by adding jalapeños or hot sauce to the dressing.
- This salad is best eaten fresh; Doritos will soften if left sitting.
- Store leftovers in an airtight container in the fridge for up to 2 days, but add Doritos only when serving.
