  • 1 packet taco seasoning
  • 15 ounces canned pinto beans, drained
  • 10 ounces canned diced tomatoes with green chiles
  • 1 cup frozen roasted corn

  • 6 thin corn tortillas, sliced into strips
  • 4 ounces shredded Mexican blend cheese
  • 0.5 tablespoon olive oil


Instructions

  1. Set your oven to 400°F and heat the olive oil in a large, oven-safe skillet over medium-high heat.
