Description
A hearty and flavorful Keto Goulash recipe made with ground beef, crushed tomatoes, and riced cauliflower, perfect for a low-carb meal.
Ingredients
- 1 tablespoon olive oil
- 1 pound ground beef
- 1 medium onion chopped
- 2 cloves garlic minced
- 1 (28 ounce) can crushed tomatoes
- 1 (15 ounce) can diced tomatoes undrained
- 1 (8 ounce) can tomato sauce
- 1 cup beef broth
- 2 tablespoons Worcestershire sauce
- 1 tablespoon Italian seasoning
- 1 teaspoon paprika
- 1/2 teaspoon salt or to taste
- 1/4 teaspoon black pepper or to taste
- 2 cups riced cauliflower frozen or fresh
- 1/2 cup heavy cream optional for creaminess
- 1 cup shredded cheddar cheese or preferred cheese for topping optional
Instructions
- Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add ground beef and chopped onion. Cook breaking up the beef until it’s browned and the onion is softened about 8-10 minutes. Drain any excess grease.
- Stir in minced garlic and cook for 1 minute more until fragrant.
- Add crushed tomatoes diced tomatoes tomato sauce beef broth Worcestershire sauce Italian seasoning paprika salt and pepper. Stir well to combine.
- Bring the mixture to a simmer then reduce heat to low cover and let it cook for at least 20 minutes (or longer for deeper flavor) stirring occasionally.
- Stir in the riced cauliflower and cook for an additional 5-7 minutes until the cauliflower is tender.
- If desired stir in the heavy cream for a richer, creamier goulash.
- Taste and adjust seasonings as needed.
- Serve hot, topped with shredded cheese if desired.
Notes
- For a deeper flavor, let the goulash simmer for longer than 20 minutes.
- Adjust salt and pepper to your personal preference.
