Description

A hearty and flavorful Keto Goulash recipe made with ground beef, crushed tomatoes, and riced cauliflower, perfect for a low-carb meal.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can diced tomatoes undrained
  • 1 (8 ounce) can tomato sauce
  • 1 cup beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon Italian seasoning
  • 1 teaspoon paprika
  • 1/2 teaspoon salt or to taste
  • 1/4 teaspoon black pepper or to taste
  • 2 cups riced cauliflower frozen or fresh
  • 1/2 cup heavy cream optional for creaminess
  • 1 cup shredded cheddar cheese or preferred cheese for topping optional


Instructions

  1. Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add ground beef and chopped onion. Cook breaking up the beef until it’s browned and the onion is softened about 8-10 minutes. Drain any excess grease.
  2. Stir in minced garlic and cook for 1 minute more until fragrant.
  3. Add crushed tomatoes diced tomatoes tomato sauce beef broth Worcestershire sauce Italian seasoning paprika salt and pepper. Stir well to combine.
  4. Bring the mixture to a simmer then reduce heat to low cover and let it cook for at least 20 minutes (or longer for deeper flavor) stirring occasionally.
  5. Stir in the riced cauliflower and cook for an additional 5-7 minutes until the cauliflower is tender.
  6. If desired stir in the heavy cream for a richer, creamier goulash.
  7. Taste and adjust seasonings as needed.
  8. Serve hot, topped with shredded cheese if desired.

Notes

  • For a deeper flavor, let the goulash simmer for longer than 20 minutes.
  • Adjust salt and pepper to your personal preference.
  • Heavy cream and shredded cheese are optional additions for extra richness and flavor.
