Description

A simple and delicious recipe for mini meatloaves, perfect for a quick and satisfying meal.


Ingredients

  • 1.5 lbs ground beef
  • 1 egg
  • 1/2 cup breadcrumbs
  • 1/2 cup milk
  • 1/4 cup finely chopped onion
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • For glaze: 1/2 cup ketchup
  • 2 tbsp brown sugar
  • 1 tsp apple cider vinegar


Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or spray with non-stick spray.
  2. In a large bowl, gently combine ground beef, egg, breadcrumbs, milk, onion, Worcestershire sauce, salt, and pepper until just mixed (do not overmix).
  3. Divide the mixture into 6-8 equal portions and shape each into a small loaf. Place them on the prepared baking sheet.
  4. In a small bowl, whisk together ketchup, brown sugar, and apple cider vinegar for the glaze.
  5. Spread a generous amount of glaze over the top of each mini meatloaf.
  6. Bake for 25-30 minutes, or until cooked through and the internal temperature reaches 160°F (71°C).
  7. Let rest for a few minutes before serving.
