Description

A simple and delicious recipe for mashed butternut squash, perfect as a side dish for any meal.


Ingredients

  • 1 medium butternut squash (about 3 lbs)
  • 2 tbsp unsalted butter
  • 1-2 tbsp brown sugar (optional, to taste)
  • 1/4 tsp salt, or to taste
  • 1/8 tsp black pepper, or to taste


Instructions

  1. Wash the butternut squash thoroughly. Carefully peel the squash using a vegetable peeler or a sharp knife (be cautious as it can be tough).
  2. Cut the squash in half lengthwise and scoop out the seeds and stringy bits with a spoon. Discard seeds.
  3. Cut the squash flesh into 1-inch cubes. You should have about 6-7 cups of cubes.
  4. Place the squash cubes in a large pot and add enough water to cover them. Bring to a boil over medium-high heat.
  5. Reduce heat to medium-low, cover, and simmer for 15-20 minutes, or until the squash is very tender when pierced with a fork.
  6. Alternatively, you can steam the squash: Place the cubes in a steamer basket over boiling water, cover, and steam for 15-20 minutes until tender.
  7. Drain the cooked squash thoroughly in a colander.
  8. Return the drained squash to the empty pot. Add the butter, brown sugar (if using), salt, and pepper.
  9. Using a potato masher, mash the squash until smooth. For a creamier texture, you can use an immersion blender or transfer to a food processor.
  10. Taste and adjust seasoning as needed. Serve hot.

Notes

  • For a richer flavor, you can add a splash of heavy cream or milk when mashing.
  • To make ahead, mash the squash and refrigerate. Reheat gently on the stovetop or in the microwave, adding a little extra butter or liquid if needed.
  • This recipe can be customized with spices like cinnamon, nutmeg, or sage.
